Beef Enchilada Casserole
- 2 lb. ground beef
- 1 pkg. taco seasoning
- 1 small onion, chopped
- 20 white corn tortillas
- cooking oil
- 1/2 lb. grated Cheddar cheese
- 1/2 lb. grated Monterey Jack cheese
- 1 (7 oz.) can diced green chilies
- 2 cans enchilada sauce
- 1 can cream of mushroom soup
- 1 (15 oz.) can chili (no beans)
- 1/2 to 1 c. crushed tortilla chips
- Brown ground beef with onion and taco seasoning; drain excess fat and set aside.
- In a separate small skillet, precook just to soften each tortilla by using tongs to flip and heat each side in a small amount of oil.
- Place tortillas on paper towels to drain excess oil until needed.
