Pressure Cooker Red Beans - Cuban Style

  1. Soak beans for 12 hours.
  2. Add olive oil to pressure cooker and saute the onion, garlic, bell pepper and 3 meats - then add the can of tomato sauce.
  3. Add beans, potatoes, carrots and seasonings to the pot and add water to cover by 2" or so.
  4. Put lid on pressure cooker and bring up to pressure then cook for 25 minutes.
  5. If too watery when done cooking , simmer with lid off pan to thicken up.
