Great Northern Italian Casserole

  1. Sort and rinse beans.
  2. Cover with water and cook until barely tender, about 1 to 1 1/2 hours.
  3. Drain.
  4. Pour beans into a 2-quart casserole.
  5. Reserve liquid from beans.
  6. Lightly brown sausage in oil.
  7. Add onion, garlic and celery.
  8. Cook until tender.
  9. Add seasoning, tomato paste, 2 cups bean liquid and salt.
  10. Pour over beans.
  11. Stir.
  12. Cover.
  13. Bake at 350u0b0 for 1 hour.
  14. Add more bean liquid if necessary.
  15. Top with cheese and brown lightly.
  16. Serves 8.
