Apricot Bbq Glazed Shrimp
- 9 slices bacon, cut into 4 pieces
- 36 medium raw peeled and deveined shrimp (about 1 1/4 pounds)
- 1 (8 ounce) can sliced water chestnuts, drained
- 36 wooden toothpicks
- 1/3 cup barbecue sauce
- 1/3 cup apricot fruit spread
- 1 tablespoon ginger
- 1 tablespoon cider vinegar
- 1/8 teaspoon dried red pepper flakes
- Preheat broiler.
- In a small mixing bowl, combine remaining ingredients and set aside.
- Wrap 1 piece of the bacon around 1 shrimp and 1 water chestnut slice and secure with a wooden toothpick. Repeat until all the bacon, shrimp and chestnuts are wrapped.
- Spray broiler rack with non stick spray. Arrange shrimp on broiler rack.
- Brush or spoon sauce evenly over each and broil 2 minutes, turn. Baste and broil 2 minutes more; turn again. Baste and broil 1 minute more, or until edges of bacon are beginning to brown.
- Serve warm and enjoy!
