Romaine Mandarin Salad
- Salad
- 1 bunch romaine lettuce, ripped into bite size pieces
- 1 cup celery, chopped
- 2 green onions with tops, chopped
- 1 (11 ounce) can mandarin oranges, drained
- Caramelized Almonds
- 1/4 cup almonds
- 2 tablespoons sugar
- Dressing
- 1/4 cup salad oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1/2 - 1 teaspoon salt
- 3 dashes Tabasco sauce
- fresh ground black pepper, to taste
- To Caramelize Almonds: Put almonds in a small skillet or saucepan. Sprinkle with sugar. Heat, stirring constantly, until light brown. Put almonds on waxed paper to cool.
- For Dressing: Whisk all ingredients together until well mixed.
- For Salad: Mix all salad ingredients, caramelized almonds and dressing.
