Fruited Freeze
- 2 (14 oz. each) cans pineapple tidbits, drained (reserve juice)
- 1 (3 oz.) pkg. lemon flavored chiffon pie filling mix
- 1/2 c. whipped cream (may use Cool Whip)
- 3 Tbsp. mayonnaise
- 1 c. miniature marshmallows
- 1 (16 oz.) can fruit cocktail, drained
- 1/4 c. sliced maraschino cherries
- Oil a 3-quart mold or 9 x 13-inch pan.
- Thoroughly drain the pineapple.
- Measure 1/2 cup reserved pineapple juice and heat to boiling.
- Prepare pie filling as directed on package, but substitute the 1/2 cup hot pineapple juice for 1/2 cup boiling water.
- Cool.
- Blend whipped cream with mayonnaise.
- Fold in pineapple, marshmallows, fruit cocktail and cherries. Combine with pie filling.
- Pour into prepared pan. Freeze.
- Unmold and garnish about 30 minutes before serving.
