Microwave Meatball Soup
- 1 (28 oz.) can tomatoes
- 1/2 c. water
- 1 small onion, diced
- 1 clove garlic, minced
- 1 Tbsp. chopped green pepper
- 1 tsp. chili powder
- 1 tsp. salt
- 1/4 tsp. marjoram
- 1/4 tsp. pepper
- 1/2 lb. ground beef
- 1/4 lb. ground pork
- 1/2 c. corn meal
- 1 egg
- Combine tomatoes, water, onion, garlic, chilies, chili powder, salt, marjoram and pepper in a 2-quart microwaveproof bowl.
- Cover with plastic wrap.
- Cook on High for 5 minutes.
- In separate bowl, combine remaining ingredients.
- Blend well. Shape into 1/2-inch balls.
- Drop meatballs into soup.
- Cook on High for 11 to 13 minutes, or until meatballs are no longer red, stirring after 5 minutes.
- Let stand five minutes before serving.
