Great Grandma Bennett'S Pork And Sauerkraut Casserole
- 1 c. carrots
- 1/2 c. celery
- 1/2 c. onions
- 1 (4 oz.) jar mushrooms
- 2 Tbsp. butter
- 2 lb. bulk pork sausage, cooked and drained
- 3 1/4 c. drained sauerkraut
- 4 c. sliced green apples
- 1 c. sour cream
- 1/2 c. chopped parsley
- 2 tsp. salt
- 1/4 tsp. pepper
- 8 c. mashed potatoes
- In a large skillet, saute carrots, celery, onions and mushrooms in butter until tender.
- Set aside.
- Add sausage, sauerkraut and apples to skillet mixture and mix well.
- Combine sour cream, parsley, salt and pepper with rest.
- Pour into a deep baking dish.
- Cover with
- 8 cups mashed potatoes.
- Bake at 350u0b0 for 40 minutes or until the potatoes are browned.
