Fruit Cake
- 4 eggs
- 250 gr butter
- 150 gr sugar
- 150 gr flour
- 1/4 tsp. salt
- 1/4 tsp. cinnamon powder
- 100 gr sultanas
- 100 gr raisins
- 100 gr currants
- 50 gr candied cherries
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- Preheat oven to 350u0b0 (175u0b0C).
- Butter a 7 x 4 x 4-inch loaf pan.
- Sift together the flour, the salt, cinnamon and baking powder.
- Using the whisks of the mixer at high speed, beat eggs until frothy.
- Pour into a mixing bowl.
- Cut the softened butter into pieces and again using the whisks, cream with sugar. Gradually pour in the beaten egg and beat well.
- Replace the whisks with the plastic blade; add the flour to the mixture and process at low speed until just blended.
- Transfer to a bowl.
- Mix in all the dried fruits, the candied cherries and the vanilla.
- Pour into the greased pan.
- Level mixture by shaking the pan.
- Bake in a preheated oven for 45 to 55 minutes.
