Fruit Cake

  1. Preheat oven to 350u0b0 (175u0b0C).
  2. Butter a 7 x 4 x 4-inch loaf pan.
  3. Sift together the flour, the salt, cinnamon and baking powder.
  4. Using the whisks of the mixer at high speed, beat eggs until frothy.
  5. Pour into a mixing bowl.
  6. Cut the softened butter into pieces and again using the whisks, cream with sugar. Gradually pour in the beaten egg and beat well.
  7. Replace the whisks with the plastic blade; add the flour to the mixture and process at low speed until just blended.
  8. Transfer to a bowl.
  9. Mix in all the dried fruits, the candied cherries and the vanilla.
  10. Pour into the greased pan.
  11. Level mixture by shaking the pan.
  12. Bake in a preheated oven for 45 to 55 minutes.
