Supreme Bean Salad
- 1 (16 oz.) can (no salt) green beans, drained
- 1 (16 oz.) can yellow wax beans, drained
- 1 (10 oz.) pkg. frozen English peas, thawed
- 1 c. chopped green pepper
- 1 c. thinly sliced purple onion
- 1 (2 oz.) jar diced pimento, drained
- 1 tsp. minced fresh garlic
- 3/4 c. white vinegar
- 1 Tbsp. vegetable oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 16 packets sugar substitute sweetened with aspartame or 8 packets sweetened with acesulfame-K or saccharin
- Combine first 7 ingredients in a large bowl; set aside. Combine vinegar, oil, salt and pepper in a small saucepan; bring to a boil.
- Remove from heat; stir in sugar substitute.
- Pour over vegetables; toss gently.
- Cover and chill 3 hours, stirring occasionally.
- Drain before serving. Yields 7 servings.
