Bon Voyage Chicken
- 1 Tbsp. olive oil
- 1 1/2 c. red bell pepper strips
- 2 c. chopped cooked chicken
- 1 Tbsp. minced garlic
- 1 tsp. chopped fresh oregano
- 1 can diced tomatoes with Italian herbs
- 2 c. hot cooked ziti or penne pasta
- 1/2 tsp. black pepper
- 1/4 c. thinly sliced fresh basil
- 1/4 c. fresh grated Parmesan cheese
- Heat oil in a large skillet over medium-high heat.
- Add bell pepper; saut 4 minutes.
- Add tomatoes; reduce heat and simmer 10 minutes, stirring occasionally.
- Add pasta and black pepper, stirring well.
- Place about 1 1/2 cups pasta mixture into each of 4 bowls; top each.
- Serving with 1 tablespoon basil and 1 tablespoon Parmesan cheese.
- Serve with Caesar salad and bread.
