Chicken With Cashew Nuts
- 1/2 to 1 lb. chicken, boned
- 2 Tbsp. whiskey
- 2 Tbsp. soy sauce
- 1/2 tsp. cornstarch
- pinch of sugar
- 1 Tbsp. peanut oil
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 lb. lean ground beef
- 1 c. soft breadcrumbs
- 1/2 c. finely chopped onion
- 1/2 c. powdered nondairy coffee creamer
- 1/4 c. ketchup
- 2 large eggs, lightly beaten
- 2 tsp. salt
- 1 tsp. dried oregano
- 1/4 tsp. freshly ground pepper
- 1 tomato, sliced
- Combine first 9 ingredients; shape into an 8-inch loaf.
- Place on a lightly greased rack of a broiler pan; top with tomato slices.
- Bake at 350u0b0 for 1 hour and 20 minutes.
- Let stand 5 minutes.
- Yield:
- 6 to 8 servings.
