Fiesta Chili
- 1 lb. ground beef
- 1 can (14 1/2 oz.) tomatoes
- 2 cans (8 oz.) tomato sauce
- 1 can (15 oz.) red kidney beans, drained and rinsed
- 1 medium onion, chopped
- 2 Tbsp. chili powder
- 1 1/4 tsp. beef bouillon granules
- 1/2 tsp. ground cumin
- 1 1/2 c. frozen whole kernel corn, thawed
- 1 can (4 oz.) chopped green chilies, drained
- 3/4 c. shredded cheddar cheese
- Brown ground beef.
- Drain.
- Add the tomatoes, tomato sauce, beans, onions, chili powder, bouillon granules, and cumin.
- Bring the mixture to a boil.
- Reduce heat to low.
- Cover and simmer for 20 minutes.
- Add the corn and chilies to the pot.
- Cover and simmer for 5 minutes, or until the flavors are well blended. Serve hot, topping each serving with cheese.
- You may substitute ground turkey and fat-free cheese.
