Cornmeal Cranberry Bread
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup cornmeal
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1/2 cup sugar
- 1 1/4 cups buttermilk
- 2 eggs
- 1/2 cup butter, melted
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 3/4 cup chopped pecans
- 3/4 cup dried cranberries (I used a mix of dried cherries and golden raisins)
- Preheat oven to 350u0b0F.
- Mix dry ingredients in a large bowl (flours- sugar).
- Mix buttermilk, eggs, melted butter, vanilla and maple syrup in a small bowl.
- Add liquid ingredients to dry, mixing with a fork.
- Add in pecans and dried fruit of choice.
- Spray a loaf pan with cooking spray, bake for 1 hour or add 10 minutes, or until done.
- Cool on rack for 20 minutes, turn out of pan.
