Veggie And Shrimp Bake
- 1 lb. cooked asparagus, green peas or other mild flavored green vegetable
- 1 1/2 c. shredded Cheddar cheese
- 1 c. Romano cheese, divided
- 2 eggs
- 1 lb. boiled shrimp, peeled
- 1 c. white wine
- 1 Tbsp. Worcestershire sauce
- 1 tsp. red hot sauce
- 1 1/2 tsp. salt
- 3/4 c. bread crumbs
- 1 can mushroom or cream of chicken soup
- Preheat oven to 350u0b0. Arrange cooked vegetables on bottom of 9 x 13 baking dish. Layer shredded Cheddar on top of vegetables. Sprinkle with 1/2 cup Romano. Layer shrimp, then sprinkle with remaining Romano. Beat the eggs with the wine, Worcestershire sauce, hot sauce and salt and pour over all. Spread the soup (undiluted) over the casserole and sprinkle with the bread crumbs. Bake for 1 hour.
