Chicken And Broccoli
- 5 lb. chicken breasts
- 1 can cream of chicken soup
- 1/2 c. mayonnaise
- 2 Tbsp. lemon juice
- 2 boxes frozen broccoli
- 1 1/2 c. shredded sharp cheese
- 1 tsp. curry powder
- Macadamia nuts (optional)
- Cut chicken into bite-size pieces and cook.
- Defrost broccoli and cut into bite-sizes.
- Save flower tops in a separate bowl for later.
- In a bowl, mix together mayonnaise, cream of chicken soup, chicken, lemon juice and curry powder.
- In a 9 x 13-inch pan, place broccoli on bottom; add chicken mixture next.
- Add cheese on top. (Optional:
- Add bits of Macadamia nuts on top.)
- Bake at 350u0b0 for 25 minutes.
- Last 5 minutes, put broccoli flowerets around edge of casserole and bake 5 minutes more.
