Creamy Coconut Mold

  1. Very lightly oil a1 1/2 quart jello mold.
  2. Put the water in a small saucepan and sprinkle gelatin over the water to soften.
  3. Stir over low heat until it dissolves; set aside.
  4. Combine cottage cheese, sweetened condensed milk, cream cheese, coconut, nuts and extract and mix well.
  5. Stir in gelatin.
  6. Refrigerate until slightly thickened.
  7. Stir and pour mixture into mold.
  8. Refrigerate 3 hours or until firm.
  9. Gently run a knife around edges of mold to release.
  10. Serve with fruit.
