Soupe A Loignon Maison(Homemade French Onion Soup)
- 3 Tbsp. butter
- 1 Tbsp. olive oil
- 1 1/2 lb. or 5 to 6 onions
- 1 tsp. salt
- 1/2 tsp. sugar
- 3 Tbsp. flour
- 2 qt. hot beef bouillon
- 1 c. red or white wine
- 1 bay leaf
- 1/2 tsp. sage
- Melt butter with oil in a 4-quart saucepan. Add sliced onions and stir.
- Cover and cook over medium-low heat for 15 to 20 minutes until onions are brown.
- Uncover.
- Raise heat to medium-high. Add salt and sugar.
- Cook for 30 minutes or until brown. Turn to medium and stir in flour.
- Brown again for about 2 minutes.
- Remove from heat.
- Put in a cup of hot bouillon the wine, bay leaf and sage.
- Bring to a simmer and continue to simmer slowly for 30 to 40 minutes. Season to taste.
- Add croutons or rye bread.
- Gob it up with loads of grated Swiss, Parmesan or Mozzarella cheese and pig out!
