Mom'S Cheesecake With Sour Cream Topping
- 1 graham cracker pie crust
- FILLING
- 2 eggs, separated
- 8 ounces cream cheese
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon lemon juice
- TOPPING
- 1 cup sour cream
- 1 tablespoon sugar
- 1 teaspoon vanilla
- Preheat oven to 300 degrees.
- Bake crust for 5 minutes, then chill in refrigerator while making filling.
- Beat egg whites until stiff, set aside.
- Blend together cream cheese, sugar and vanilla. Add egg yolks and lemon juice, blend thoroughly. Fold in beaten egg whites. Spread filling over cooled crust.
- Bake at 300 degrees for 30 minutes.
- Hand-stir the three topping ingredients, spread over baked pie.
- Serve chilled.
