Oatmeal Pumpkin Bread
- 3 c. sifted all-purpose flour
- 1 c. uncooked regular oats
- 1 Tbsp. plus 1 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground ginger
- 1 tsp. ground mace
- 1/4 tsp. ground cloves
- 1 c. honey
- 1/2 c. vegetable oil
- 4 eggs, lightly beaten
- 2/3 c. unsweetened orange juice
- 1 (16 oz.) can pumpkin
- 1 c. chopped pecans
- 1 egg white, lightly beaten
- 1/4 c. uncooked regular oats
- Combine first 9 ingredients in a large bowl.
- Combine honey, oil and eggs.
- Add to flour mixture, stirring just until blended. Stir in orange juice, pumpkin and pecans.
