Sweet And Sour Pork
- 1 (8 1/4 oz.) can pineapple chunks
- 2 (about 3/4 lb.) pork tenderloins, cut into 3/4-inch cubes
- 2 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/8 tsp. ground ginger
- 1 (6 oz.) pkg. frozen snow pea pods, thawed
- 3/4 c. chopped onion
- 2 Tbsp. vegetable oil
- 2 Tbsp. brown sugar
- 1 Tbsp. soy sauce
- 1/8 tsp. pepper
- 1 small green pepper, cut into strips
- hot, cooked rice
- Drain the pineapple; reserve juice. Saute pork and onion in a large skillet in hot oil for 10 to 12 minutes or until pork is done. Combine reserved pineapple juice, lemon juice, sugar and spices.
- Stir well.
- Add juice mixture and green
- pepper to skillet.
- Cook over medium heat 1 to 2 minutes or until sauce is thickened, stirring constantly.
- Add pineapple and snow peas. Cook 2 minutes or until thoroughly heated, stirring occasionally. Serve over rice.
- Yields 6 servings.
