Meatball Soup
- 1 1/4 lb. ground lean pork
- 2 carrots, chopped fine
- 6 medium potatoes, diced
- 1/4 c. chopped onion
- 2 stalks celery
- 1/4 tsp. dill weed (fresh or dried)
- 1 tsp. chopped parsley
- 2 Tbsp. salt
- 1/2 tsp. pepper
- 3 qt. water
- 1/2 stick oleo
- 1/2 c. sour cream
- 1 c. milk
- 1/3 c. flour
- plain bread crumbs
- Saute onion in oleo until golden.
- Add this to ground pork. Add a little salt.
- Mix well.
- Make tiny meatballs and roll in crumbs.
- Cut up carrots, celery and potatoes.
- Add to water; boil. Add salt, dill, parsley, etc.
- Then add meatballs when water is boiling.
- Cook until meat and vegetables are done.
- Let cool down. Mix sour cream, milk and flour in blender.
- Add slowly to soup, stirring constantly.
