Mexican Casserole
- 2 c. crushed nacho chips
- 1 Tbsp. oil
- 1 lb. ground beef
- 1/4 c. chopped onions
- 1 can diced tomatoes
- 1 pkg. taco seasoning
- 1 small can green chilies
- 1/4 c. chopped black olives
- 1 c. sour cream
- 1 1/2 c. shredded Mozzarella cheese
- 1/2 c. shredded Cheddar
- Saute onions in oil until done.
- Cook ground beef and add to it.
- Stir in taco seasoning, tomatoes, olives and chilies.
- Simmer 10 minutes.
- Preheat oven to 350u0b0.
- Put in a 9 x 13-inch baking dish. Spread 1 cup nacho chips on bottom of dish.
- Spoon meat mix, sprinkle cheese over, spread sour cream over and sprinkle remaining chips. Bake 25 minutes. Sprinkle Cheddar cheese atop. Bake 5 minutes more. Take it out of the oven and pig out.
