Pumpkin Pancakes With Apple Cider Syrup

  1. For Pancakes:
  2. Combine dry ingredients.
  3. Whisk egg yolks, milk, pumpkin and oil. Stir into dry mixture until moist.
  4. In mixing bowl beat egg white to stiff peaks and fold into batter gently.
  5. For syrup:
  6. Bring to everything but butter to boil on medium heat for 1 minute
  7. Remove from heat and stir in 1/4 cup butter until melted.
