Spinach Lasagna
- 1 (15 oz.) can tomato sauce
- 1 medium diced onion
- 1/4 tsp. basil
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 1 c. Ricotta cheese (or small curd cottage cheese)
- 6 oz. shredded Mozzarella cheese
- 1 tsp. parsley flakes
- 2 (10 oz.) pkg. frozen, chopped spinach, cooked and drained well
- 1 large tomato, sliced
- 2 oz. grated Parmesan cheese
- 4 oz. uncooked lasagna noodles
- Combine first 5 ingredients in bowl.
- Mix next 3 ingredients in another bowl; set aside.
- Place cooked spinach in bottom of an 8 x 10-inch pan.
- Spread cheese mixture over spinach.
- Layer uncooked noodles.
- Pour tomato mixture over noodles.
- Top with sliced tomatoes.
- Sprinkle with Parmesan cheese.
- Bake at 350u0b0 for 40 to 45 minutes.
