Indian Salad Dressing
- 2 egg yolks, from 2 hard-boiled eggs
- 3/4 teaspoon salt
- 1/2 teaspoon powdered sugar
- 1/4 teaspoon paprika
- 1 dash cayenne pepper
- 1 dash white pepper
- 1 tablespoon lemon juice
- 2 tablespoons vinegar (salad)
- 1/2 cup olive oil
- 1 tablespoon red pepper, finely chopped
- 1 tablespoon green pepper, finely chopped
- 1 tablespoon pickled beet, cubed
- 1 teaspoon parsley, finely chopped
- Force the yolks through a strainer.
- In a canning jar, add the crushed yolks, salt, sugar, paprika, cayenne, white pepper, lemon juice, and olive oil.
- Shake until mixed well.
- Add remaining ingredients and shake again.
- Refrigerate until chilled.
