Plainville Turkey Breasts In Marsala Wine

  1. Cut fillets into 1/2-inch slices.
  2. Gently pound with tenderizer.
  3. Combine eggs and milk in a shallow dish.
  4. On a flat plate, combine bread crumbs, Parmesan and poultry seasoning.
  5. Dip turkey in egg mixture, then in bread crumb mixture, coating thickly.
  6. In frying pan, melt 1 tablespoon butter and 1 tablespoon oil.
  7. Saute a few turkey slices at a time over low heat for 5 minutes.
  8. Add remaining oil and butter as needed.
  9. Return all cooked turkey to frying pan.
  10. Add wine; cover and simmer for 2 minutes.
  11. Top with fried mushrooms.
