Wild Duck Jambalaya

  1. Brown duck and sausages in melted butter and olive oil.
  2. Add onions, bell peppers and garlic.
  3. Saute for 2 minutes, stirring continuously.
  4. Add all ingredients, except rice and simmer for 45 minutes, stirring often.
  5. Check duck for tenderness.
  6. Add rice and more chicken stock, if necessary.
  7. Cover and place in lowest heat level and cook for 15 minutes or until rice is nice and fluffy.
