White Fruit Cake
- 1 1/2 c. shortening
- 1 1/2 c. sugar
- 8 eggs
- 1 1/2 tsp. rum flavoring
- 2 1/4 c. flour
- 2 1/4 tsp. baking soda
- 3/4 c. unsweetened pineapple juice
- 1 1/8 lb. mixed fruit (candied)
- 1 1/4 c. candied cherries
- 1 1/2 c. pineapple, drained
- 3/4 c. dates
- 3/4 lb. white raisins
- 3/4 c. flour
- 3 c. coconut
- 3 c. walnuts
- Mix shortening, sugar, eggs, rum flavoring, flour, baking soda and unsweetened pineapple juice together.
- Mix the mixed fruit, candied cherries, pineapple, dates, raisins and flour together.
- Combine the two mixtures together and add the coconut and walnuts.
- Mix all together.
- Pour into greased bread loaf pans.
- Bake at 275u0b0 for 2 1/2 hours.
- Makes approximately 3 to 4 loaves.
