Cilantro Butter Tilapia Skillet Fillets
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/8 teaspoon ground red pepper
- 4 -6 ounces tilapia fillets
- cooking spray
- 1 lemon, quartered
- 2 tablespoons butter, softened
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon paprika
- 1/8 teaspoon salt
- Combine the first three ingredients and wprinkle over both sides of the fish.
- Heat a large non-stick skillet over medium high heat and coat the pan and both sides of the fish with cooking spray.
- Place the fish in the pan and cook for three minutes on each side, or until it flakes with a fork.
- Place the fish on a serving platter and squeeze the lemon wedges over the fish.
- Place the butter and remaining ingredients in a small bowl and stir until blended, serve with the fish.
