Crunchy Ice Cream Squares
- 1 qt. vanilla or chocolate ice cream
- 1 1/4 c. crushed crispy rice cereal (Rice Chex)
- 1/2 c. light brown sugar, firmly packed
- 1/2 c. Macadamia nuts or cashews, chopped
- 1/4 c. butter or margarine, melted
- 1/2 c. flaked coconut
- fresh strawberries or other berries for garnish (optional)
- Remove ice cream from freezer to soften as you prepare the crunchy base for the dessert.
- Combine the cereal, brown sugar, nuts, butter or margarine and coconut.
- Mix and blend well.
- Press half the crunchy mixture into the bottom of a 9-inch square cake pan.
- Pat down firmly.
- Spread ice cream evenly over the top. Sprinkle with remaining crunchy mixture to cover.
- Cover airtight. Freeze until firm, about 1 hour.
- When ready to serve, remove from freezer.
- Cut into squares.
- Top each square with a fresh strawberry, if desired.
