Healthy Sweet And Sour Chicken
- 5 to 6 chicken breasts (skinned and boned)
- 1 c. green onion, chopped
- 2 green peppers (1 inch squares)
- 1 1/3 c. cornstarch
- 1/3 c. soy sauce
- 1 tsp. ground ginger
- 1/2 c. plus 1 Tbsp. cider vinegar
- 3/4 c. ketchup
- 3/4 c. water
- 3/4 c. sugar
- 1/2 Tbsp. sesame oil
- 1 1/2 Tbsp. vegetable oil
- Cut chicken into 1 inch cubes.
- Marinate for 45 minutes in soy sauce, sesame oil and ginger.
- Mix ketchup, water, vinegar and sugar and set aside.
- Put marinated chicken and cornstarch in Ziploc bag and shake until well coated.
- Preheat skillet or wok, add 1 tablespoon vegetable oil and add chicken breasts a few at a time.
- Brown chicken, then remove from skillet.
- Put in 1 teaspoon vetetable oil in skillet and add vegetables, stir constantly and cook for 5 mintues.
- Pour sweet and sour sauce over vegetables; bring to boil, add chicken and cook 10 minutes to thicken.
- Serve with rice. 6 to 8 servings.
