Chocolate Covered Cherry Cookies

  1. In a large mixing bowl, stir together the flour, cocoa, baking powder, soda and salt; set aside.
  2. In a large mixing bowl, beat margarine for 30 seconds.
  3. Add sugar; beat on low speed until fluffy.
  4. Add egg and vanilla; beat well on medium speed. Gradually add flour mixture to beaten mixture, beating on low speed until well blended.
  5. Shape dough into 1-inch balls; place on ungreased cookie sheet.
  6. Press down center of each cookie with thumb.
  7. Drain cherries; reserve juice.
  8. Press a cherry into the center of each cookie.
  9. Bake at 350u0b0 for about 10 minutes.
  10. Cool completely.
  11. Add frosting.
