Turkey Wild Rice Soup

  1. Rinse rice and drain.
  2. In medium saucepan, combine rice, oil and water; bring to a boil.
  3. Reduce heat; cover and simmer for 30 minutes.
  4. Meanwhile, in a large kettle, cook onion, celery and carrot in butter until vegetables are almost tender.
  5. Blend in flour; cook and stir 2 minutes.
  6. Add broth and undrained rice. Bring to a boil; cook and stir until slightly thickened.
  7. Stir in remaining ingredients.
  8. Reduce heat and simmer, uncovered, for 20 minutes.
