Turkey Wild Rice Soup
- 1/3 c. uncooked wild rice
- 1 Tbsp. vegetable oil
- 1 qt. water
- 1 medium onion, chopped
- 1 celery stalk, finely chopped
- 1 carrot, finely chopped
- 1/2 c. butter
- 1/2 c. flour
- 3 c. chicken broth
- 2 c. light cream
- 1/2 tsp. rosemary
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. diced cooked turkey
- Rinse rice and drain.
- In medium saucepan, combine rice, oil and water; bring to a boil.
- Reduce heat; cover and simmer for 30 minutes.
- Meanwhile, in a large kettle, cook onion, celery and carrot in butter until vegetables are almost tender.
- Blend in flour; cook and stir 2 minutes.
- Add broth and undrained rice. Bring to a boil; cook and stir until slightly thickened.
- Stir in remaining ingredients.
- Reduce heat and simmer, uncovered, for 20 minutes.
