Rollettes
- 1 1/2 lb. round steak, (1/4-inch thick)
- 3 strips bacon
- 1/4 c. chopped onion
- 1 c. bread crumbs
- 1/4 c. chopped parsley
- 1/4 c. Parmesan cheese
- 3 Tbsp. olive oil
- 1 can tomato paste
- 2 c. hot water
- 1 clove minced garlic
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- pinch of basil or marjoram
- cooked spaghetti or favorite pasta
- Cut steak 6 oblong pieces (or have done at the butcher's). Sprinkle with salt and pepper.
- Pound thin with edge of plate.
- Top each with half strip bacon.
- Mix crumbs, onion, parsley and cheese. Spread over bacon.
- Roll up and secure with toothpicks or string. Brown gently on all sides in hot oil.
- Mix tomato paste and remaining ingredients, except pasta.
- Pour over rolls.
- Cover tightly and simmer 1 1/2 hours or until tender.
- Remove toothpicks. Serve over spaghetti or favorite pasta.
