Corn And Rice Especiale
- 3/4 c. regular rice
- 1/2 c. chopped green pepper
- 3 Tbsp. green onion, sliced
- 3 Tbsp. butter or margarine
- 2 (17 oz.) cans cream style corn
- 1 (17 oz.) can whole kernel corn
- 4 beaten eggs
- 1/2 c. milk
- 1 tsp. salt
- 1 c. coarsely crushed cheese crackers
- paprika
- Cook rice according to package direction.
- Cook green pepper and onion in butter until tender but not brown; stir into rice with corn, eggs, milk and salt.
- Turn into 12 x 7 1/2 x 2-inch baking dish.
- Bake covered at 375u0b0 until knife inserted in center comes out clean, 40 to 45 minutes.
- Sprinkle cracker crumbs and paprika around edge.
- Bake uncovered about 5 minutes longer.
- Makes 10 to 12 servings.
