Hearty Beef & Vegetable Soup
- 2 lbs. stew beef
- 4 quarts water
- 16 beef bouillon cubes
- 1 Tbsp. salt
- 4 c. chopped cabbage
- 1 1/2 c. chopped onion
- 6 sliced carrots
- 3/4 c. sliced celery
- 28 oz. diced tomatoes
- 5 oz. frozen lima beans
- 5 oz. frozen green beans
- 5 oz. frozen peas
- 5 oz. frozen corn
- 1 diced potato
- 2 Tbsp. parsley flakes
- 6 oz. tomato paste
- 2 tsp. salt
- 1/2 tsp. pepper
- Place water, 1 Tbsp. salt and bouillon in large pot and bring to a boil.
- Add cabbage, onion, carrots, celery and tomatoes.
- Cut beef into bite-size pieces and add to soup.
- Return to boil, lower heat, cover and simmer 30 minutes.
- Add remaining ingredients and simmer covered for 3-4 hours.
- Tastes even better the next day.
