Wonder Chicken
- 1 lb boneless skinless chicken thighs
- 1/2 cup onion
- 1/2 cup green pepper and red pepper
- 3 egg yolks
- 4 cups oil
- 2 tablespoons oil
- Marinade
- 2 tablespoons light soy sauce
- 1 egg white
- 2 tablespoons cornstarch
- Seasoning Sauce
- 2 tablespoons soy sauce
- 2 tablespoons water
- 1 teaspoon sugar
- 1 teaspoon wine (optional)
- 1 teaspoon cornstarch
- 1/2 teaspoon sesame oil
- 1/4 teaspoon salt
- Peanut Mixture
- 2 tablespoons ground roasted peanuts
- 1 tablespoon ground roasted sesame seeds
- 1 teaspoon sugar
- Dice chicken into 1/2 inch cubes and marinate in above marinade.
- Cut onion and peppers into little cubes.
- Prepare peanut mixture. Set aside.
- Add marinated chicken to lightly beaten egg yolks.
- Heat 4 cups of oil to 350u0b0F Deep fry chicken a few pieces at a time for about 2 minutes.
- Heat 2 Tbsp of oil to stir-fry onion and peppers. Pour in seasoning sauce and stir until sauce thickens.
- Return chicken to sauce and mix well.
- Serve with grounded peanut mixture on top of chicken.
