Celebration Spaghetti
- 1 Tbsp. olive oil
- 2 medium zucchini, sliced
- 1 c. pitted ripe olives, sliced
- 1 (28 oz.) can tomatoes, chopped
- 2 (6 oz.) cans tomato paste
- 1/4 c. Parmesan cheese, grated
- 1 tsp. salt
- 1/2 tsp. sweet basil leaves
- 1/4 tsp. butter
- 1 (1 lb.) Creamettes spaghetti
- 2 Tbsp. softened butter or margarine
- 2 Tbsp. Parmesan cheese, grated
- 1/2 c. mushrooms, sliced
- 1/4 tsp. pepper
- In a large skillet, heat oil.
- Saute zucchini, mushrooms and olives.
- Add tomatoes, tomato paste, Parmesan cheese, salt, basil and pepper.
- Simmer 15 minutes.
- Prepare spaghetti.
- Drain.
- Toss with softened butter.
- Arrange on warm platter.
- Pour on sauce and top with grated Parmesan cheese.
- Makes 8 to 10 servings.
