Chocolate Chip Oatmeal Cake
- 1 3/4 c. boiling water
- 1 c. Quick Quaker oats (do not use instant)
- 1 c. sugar
- 1 c. lightly packed brown sugar
- 1 stick soft margarine
- 2 large or 3 medium eggs
- 1 3/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. cocoa
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- 3/4 c. walnuts or pecans
- In a large mixing bowl pour boiling water over oats.
- Let it stand for 10 minutes.
- Stir in sugar, brown sugar and soft margarine.
- Add eggs.
- Sift together flour, baking soda, salt and cocoa; add.
- Stir in half of the chocolate chips.
- Pour into a greased and floured 9 x 13-inch cake pan.
- Spread remaining chips and walnuts or pecans, coarsely chopped on top.
- Bake in 350u0b0 oven for 40 minutes.
- Cool before serving.
