Colombian Holiday Bread(Mantecada)
- 1 lb. butter, softened
- 2 c. sugar
- 1 Tbsp. vanilla
- 2 c. flour
- 1 c. corn meal
- 1/4 tsp. salt
- 2 Tbsp. cornstarch
- 2 tsp. baking powder
- 12 eggs
- 1 Tbsp lemon juice or 1/4 c. rum
- 1 c. raisins
- In a large mixing bowl, mix butter, sugar and vanilla until smooth and creamy.
- In another bowl, combine flour, cornmeal, salt, cornstarch and baking powder.
- Add dry ingredients and eggs to butter mixture, alternating 1/2 cup flour, then 2 eggs, etc., mixing well with each addition until smooth and creamy.
- Mix in lemon juice (or rum) and raisins.
- Grease 2 (9 x 13-inch) pans or 1 (9 x 13-inch) and 2 (8 x 8-inch) square pans.
- Pour batter into pans about 2/3 full.
- Bake at 325u0b0 for 60 minutes, until toothpick inserted comes out clean.
