Macaroni Salad
- 1 small box elbow macaroni
- 1/2 c. salad dressing
- 1/2 c. chopped green peppers
- 1/4 c. sweet pickle
- 2 Tbsp. vinegar
- 3 Tbsp. chopped pimientos
- 1/2 c. chopped onion
- 1/4 c. chopped celery
- 4 hard-boiled eggs
- 2 Tbsp. prepared mustard
- 1 c. chopped tomatoes (optional)
- salt and pepper to taste
- Cook macaroni according to package directions (do not overcook).
- Drain and soak in cold water for 10 to 15 minutes. Then drain and add mashed egg yolks, sugar and salt.
- Pour vinegar over this and let set while preparing other ingredients.
- Chop the egg whites.
- Add other ingredients and mix well.
- Chill.
- Garnish with celery seed and paprika.
- Don't use tomatoes if salad is made for next day.
