Sweet Potato Surprise Cake
- 1 1/2 c. cooking oil
- 2 c. sugar
- 4 eggs, separated
- 4 Tbsp. hot water
- 2 1/2 c. sifted cake flour
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 1/2 c. grated raw sweet potato
- 1 c. chopped nuts
- 1 tsp. vanilla flavoring
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. butter
- 1 c. sugar
- 3 egg yolks, beaten
- 1/3 c. orange juice
- 1 tsp. grated orange rind
- 2 egg whites, stiffly beaten
- Cream the butter.
- Add sugar; cream until light and fluffy. Add egg yolks one at a time.
- Beat well.
- Add sifted dry ingredients alternately with orange juice; beat well.
- Add rind. Fold in egg whites.
- Put into two 9-inch cake pans and bake at 375u0b0 for 25 to 30 minutes.
