Pizza Baked Fish
- 1/2 c. sliced fresh mushrooms
- 1/4 c. chopped onion
- 1/4 c. water
- 3 Tbsp. sodium-free tomato paste
- 1/2 tsp. dried basil, crushed
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. sugar
- 1/4 tsp. fennel seed
- 1/8 tsp. crushed red pepper
- 1 clove garlic, minced
- nonstick cooking spray
- 8 oz. red snapper fillets
- 4 green pepper rings
- 1/2 c. shredded no-fat Mozzarella cheese (2 oz.)
- For sauce, in a small saucepan, combine half of the mushrooms, onion, water, tomato paste, basil, oregano, sugar, fennel seed, red pepper and garlic.
- Bring to boiling, then reduce heat. Simmer, uncovered, for 4 minutes, stirring the mixture occasionally.
- Remove from heat.
