Mother'S Brown Bread(Mors Grovbrod)
- 1 cake fresh yeast
- 4 c. lukewarm water
- 1/2 c. molasses
- 1 Tbsp. salt
- 1/2 c. melted shortening
- 6 c. white flour
- 2 c. whole wheat or graham flour
- 1/2 c. sugar
- Dissolve yeast in 1/2 cup lukewarm water; let stand for 15 minutes.
- In a large bowl, add 3 1/2 cups lukewarm water, molasses, salt, sugar and shortening.
- Add enough flour to make a soft sponge.
- Beat thoroughly.
- Add remainder of flour to make stiff dough.
- Knead dough well.
- May add some shortening to kneading surface to help kneading.
- Place dough in greased bowl; cover and let rise in a warm place.
- When double in bulk, knead again.
- Let rise once more, then shape into 4 loaves.
- Place in loaf pans.
- Let dough rise until loaves are double in size.
