Ground Beef Casserole
- 2 lb. ground beef *
- 1 large onion, chopped
- 2 Tbsp. chili powder
- 2 tsp. cumin
- 1 tsp. salt (optional)
- 1 (15 oz.) can Ranch Style beans
- 6 corn tortillas
- 1 1/2 c. Cheddar cheese, shredded
- 1 1/2 c. Monterey Jack cheese, shredded
- 1 (10 oz.) can Ro-Tel tomatoes, juice and tomatoes separated (found in Mexican food section)
- 1 can mushroom soup
- Brown ground beef; drain.
- Add onion, chili powder, cumin and salt.
- Layer meat mixture as first layer in 9 x 13-inch pan, then layer in following order: beans, tortillas, Cheddar cheese, Monterey Jack cheese, Ro-Tel tomato juice, mushroom soup (undiluted).
- Top with chopped Ro-Tel tomatoes.
- Refrigerate overnight.
- Bake, uncovered, for 1 hour at 350u0b0.
