Orange Praline Yams Casserole
- 5 lb. canned yams, drained
- 2/3 c. orange juice
- 1 Tbsp. grated orange peel
- 5 Tbsp. brandy
- 2 tsp. salt
- ground pepper
- 1 tsp. ground ginger
- 1 c. melted butter
- 1 c. light brown sugar
- 3 egg yolks
- 1 c. chopped pecans
- 1 tsp. ground cinnamon
- In a mixing bowl with electric mixer, beat yams until smooth. Add orange juice and peel, brandy, salt, pepper to taste, ginger, 1/4 cup melted butter, 1/3 cup brown sugar and egg yolks, beating until mixture is light and fluffy.
- Pour into buttered shallow 2-quart casserole.
- In a small bowl combine remaining melted butter, remaining brown sugar, pecans and cinnamon.
- Spread evenly over yams (at this point casserole may be refrigerated overnight). Bake at 350u0b0 for 45 to 50 minutes or until golden brown and bubbly.
- Let stand 10 minutes before serving.
- Serves 10 to 12.
