Cherry Coffee Cake
- 3 c. sifted all-purpose flour
- 1 1/2 c. sugar
- 3 tsp. baking powder
- 3 eggs
- 3/4 c. vegetable oil
- 1/2 c. orange juice
- 1 tsp. vanilla flavoring
- 1 (21 oz.) can cherry pie filling
- 1/4 c. sugar
- 1/2 tsp. ground cinnamon
- Sift flour with sugar and baking powder; add eggs, oil, orange juice and vanilla.
- Beat until smooth, about 4 minutes.
- Spread 1/2 the batter in an ungreased 13 x 9 x 2-inch baking pan.
- Spread pie filling over batter, then top with remaining batter.
- Combine sugar and cinnamon; sprinkle over batter.
- Bake at 350u0b0 for 35 to 40 minutes.
- (Apple, peach, strawberry, blueberry or raisin pie filling may be substituted for cherry.)
- Yields 16 servings.
