Cheese 'N Sausage Pie

  1. Preheat oven to 425u0b0.
  2. Bake pie shells until lightly brown, about 7 minutes.
  3. Remove and set aside.
  4. Reduce oven temperature to 350u0b0.
  5. In a skillet, brown sausage until done.
  6. Remove and drain on paper towel.
  7. Reserve 2 tablespoons fat.
  8. Saute onions and bell pepper until crisp-tender, about 2 minutes.
  9. Stir sausage into mixture.
  10. Divide sausage mixture between the pie shells. Sprinkle cheese on top.
  11. In bowl, beat eggs until blended; add remaining ingredients.
  12. Mix well.
  13. Pour over cheese.
  14. Bake for 30 to 35 minutes.
  15. Cool 5 minutes.
  16. Slice and serve with tossed salad.
