Game Hens With Spinach-Rice Stuffing

  1. Prepare Spinach-Rice Stuffing.
  2. With kitchen scissors, cut hens in half lengthwise.
  3. Rinse and pat dry.
  4. Press 3/4 cup of the stuffing onto cut side of each hen half.
  5. Holding stuffing in place with your hand, arrange hens, skin side up, in a greased shallow baking pan.
  6. Melt butter in a small pan over low heat; stir in onion, parsley, mustard and fines herbes.
  7. Brush over hens.
  8. Bake, uncovered, in a 375u0b0 oven for 45 to 60 minutes or until leg joint moves easily; during last half-hour, baste occasionally with pan drippings.
  9. Makes 6 servings.
